Dorothy Wallin's Pork Loin Roast

Dorothy Wallin is a friend of my mom and our family has been making her pork loin roast for as long as I can remember. It would make its annual appearance at the US Steel Christmas party at our house, but there is certainly no need to save it for a special occasion! It is crazy easy and it leaves a lot of leftovers which can be frozen for BBQ pork sandwiches! So here goes:

Ingredients:
6lb pork loin
3 cloves garlic
18 whole cloves
6 Tbsp soy sauce
1/4 cup lemon juice
1/2 cup ketchup
1/2 tsp pepper
Serve over rice with apricot preserves

-Place the pork loin in the crock pot (you may have to stuff it in there but it will shrink up after cooking)

-Split the cloves of garlic and poke them in the top of the pork loin

-Poke the cloves in the top of the pork loin (yes, all 18 of them)

-In a bowl mix the soy sauce, lemon juice, ketchup and pepper together and pour it over the top of the pork loin.

-Cook in crock pot on LOW for 6 1/2 hours. The meat should just fall apart!

To serve, strain the au jus and serve over rice. Heat a jar of apricot preserves to serve over the meat

Mama Tyson serves this with crusty bread and a salad with poppy seed dressing.

  1. and don't forget to mix the au jus with the apricot preserves and a little of your favorite bbq sauce for barbecue sandwiches the next day--best served on Sister Schubert's yeast rolls. YUMMY
