4th of July Treat

We're going camping on Lake Guntersville for the 4th of July...well fake camping...in an RV...with glorious air conditioning, mattresses, running water, refrigerator, etc! (might even take the laptop just in case we need to Hulu)

You can't count calories over a holiday weekend right? I think it's one of Murphys laws or something. So in addition to the giant container of homemade red white and blue Rice Krispie Treats, we'll be taking a batch of these cuties found on the Kraft Foods website.


Firecracker Bites
1 pkg (8oz) Philadelphia Cream Cheese, softened
1 cup cold milk
1 pkg (3.4oz) JELL-O Vanilla Instant Pudding
1 1/2 cups thawed Cool Whip whipped topping, divided
1 pkg (12oz) NILLA Wafers
1/2 cup mixed red, white and blue sprinkles
42 pieces of red string licorice (1 inch pieces)

*Beat cream cheese in large bowl with mixer until creamy. Gradually add in milk. Add dry pudding mix and beat 2 minutes. Whisk in 1 cup of Cool Whip.

*Spoon about 1 1/2 Tbsp pudding mixture onto a NILLA wafer and cover with another wafer to make sandwiches. Repeat until mixture is gone. Freeze sandwiches for 2 hours or until filling is firm. ::UPDATE:: spoon the pudding mixture into a ziploc bag and cut a hole at the corner, squeeze onto each wafer, it was a messy mess trying to spoon it on each cookie!

*Spread top of wafer sandwiches with remaining Cool Whip. Top with red, white and blue sprinkles and insert licorice piece in top of each. Freeze until ready to serve. (hmmm...this might be a challenge at the campsite...oh well, we'll just have to eat them quick)
