We all know it's important to eat a good breakfast, but if Jim expected me to wake up in the mornings to cook one…well he'd be extremely mistaken!!! So every couple of months we whip up a batch up these delicious burritos and stash them in the freezer for a quick and easy weekday breakfast. This recipe makes 20 frozen burritos costing about $0.85 each.
The ingredients
20 burrito-sized flour tortillas
A dozen eggs
1 roll of Jimmy Dean (or similar) sausage
1 can of Ro-Tel
1 green pepper
1 onion
1 bag of "Simply Potatoes" or "Bob Evans" diced potatoes
1 cup shredded cheddar cheese
Saran wrap
Preparing the Burritos
-Begin cooking sausage in a large pot, add the chopped bell pepper and onion. Cook until sausage is browned and vegetables are softened. Move cooked mixture into a large bowl.
-Using the leftover grease in the pot begin cooking the diced potatoes until soft. Add to large bowl containing sausage/vegetable mixture.
-Crack all of the eggs into a small bowl and beat them with a fork until they're roughly consistent. Pour this egg mixture into a large nonstick skillet. Stir them constantly, scraping any cooking eggs off of the bottom. When eggs are cooked add them to bowl containing sausage/vegetable/potato mixture. Add the can of rotel (drained) and 1 cup of shredded cheddar cheese. Stir mixture.
-Heat the tortillas in the microwave for about 20 seconds so that they don't break when you roll them. Take out a single tortilla and put a large spoonful of the sausage/egg/vegetable mixture onto the tortilla (about two heaping tablespoons). Roll it up, like this, and wrap it tightly in saran wrap. Repeat 19 times
I store all my saran wrapped burritos in a gallon size Ziploc bag in the freezer.
Warming Up the Burritos
Simply take a burrito out of the freezer and put it in the microwave for about 2 minutes (leave the saran wrap on). This will produce a warm, moist burrito. You may need to play with the exact times a bit depending on your microwave and the size of the burrito.
Let it cool for a minute in microwave, take it out of the saran wrap and enjoy.
I eat mine with a little bit of salsa on the side! YUMMY…think I'll go grab one now J
